Abstract Protein hydrolysates originating from egg white have already been reported to be bioactive and, among their biological activities, possess the antioxidant property that protects the body from early ageing and diseases linked to oxidation. Therefore, the objective of this work was to evaluate the antioxidant activity of hydrolysates obtained by the hydrolysis of egg white from hen poultry. The protease produced by Aspergillus avenaceus URM 6706 was purified and subsequently applied to hydrolysate the egg white, and the degree of hydrolysis was verified during the protease exposure time (4-24 h). O cupuaçu é considerado um importante fruto tipicamente amazônico e apresenta polpa ácida, agradável e de aroma característico. Esses atributos de qualidade o colocam no ranking das exportações de frutas. No Brasil, o cupuaçu é consumido principalmente na forma de polpa congelada. Os estudos com marcas comerciais de polpa de cupuaçu que correlacionaram a atividade antioxidante aos níveis de compostos bioativos mostraram que a capacidade de sequestro de espécies radicalares, pelo método do radical ABTS, apresentou correlação positiva com os compostos fenólicos e não com os carotenoides e a vitamina C. Lately, tropical fruit consumption has increased due to a higher knowledge of its nutritional and therapeutic value. The aim of this work was to evaluate the antioxidant potential of cashew apples from different early dwarf clones during their ripening. The clones analyzed included: CCP 76, CCP 09, BRS 189 and BRS 265 in seven ripening stages. They were analyzed for vitamin C, total carotenoid, total anthocyanin, yellow flavonoids and polyphenol content and total antioxidant capacity. Clone BRS 265 ripe cashew apple presented the highest vitamin C content (279.37 mg x 100 g-1). Ethanolic extracts from 23 different dried herbs and spices commercialized in Brazil were investigated for their free radical scavenging properties using the stable free radicals 2,2'-diphenyl-β-picrylhydrazyl (DPPH•) and 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS•+), and Trolox as reference (TEAC) for both radicals. The kinetic curves for both radicals showed to follow the first order kinetics model and the decay rate constant (k obs) was calculated. For all the samples, the two methods showed a good linear TEAC correlation, indicating that the average reactivity of the compounds present in the ethanolic extracts was similar. This prospective case-control study evaluated whether pre-eclamptic women and their newborns show higher degrees of oxidative stress than normal pregnancies and sought to determine if this stress is related to clinical severity. ABSTRACT Edible films are an alternative to synthetic materials used for packaging foods. The aim of this study was to develop and characterize films made from cassava starch, freeze-dried acai and glycerol. The films were characterized for thickness, water vapor permeability, water solubility, anthocyanins, antioxidant capacity and mechanical properties. The results indicated a rich edible film in anthocyanins with considerable antioxidant capacity (150.70 micromol Trolox), which can extend the commercial validity of the packaged food and meets the growing demand for biodegradable packaging that tends to reduce the environmental impact. Introducción: Mollinedia racemosa (Schltdl.) Tul. (romadizo), es una especie usada por grupos indígenas y comunidades campesinas de la cuenca del Orinoco colombiano, empleada para tratar fiebres, dolores de cabeza y problemas de estómago, especialmente en el tratamiento del resfriado y como analgésico. Objetivo: evaluar el potencial antioxidante de las hojas de M. racemosa (romadizo). Métodos: se preparó un macerado etanólico de hojas (relación 1:15, vegetal/solvente), renovando el solvente cada 24 h hasta agotar la muestra.
